So I Have Been Busy…..

That is pretty much it. I have been working. Nothing amazing or exciting, just working. Since I wrote last, we have purchased a grill. I never had a gas grill before and I like it. It is a lot less mess than charcoal. Besides, charcoal is not allowed at out apartment. Therefore, we have been a bunch of grilling maniacs. We have made hamburgers, hot dogs (regular and Dodger), steaks, and brats. Some woman at the Vons told me that she would not give her kids hot dogs because they give kids leukemia. I told her every kid in America will need chemo, and I bought more hot dogs. There are some weird people out there. What would Catherine do without hot dogs?

Last week I met an old friend from high school for dinner downtown. She was in town seeing a show so we met up. While we were sitting in the mall, we met up with another person we knew from high school. That was somewhat odd. We were there, nowhere near the high school had we gone to, and we ran in to one another there. It was kind of nice. I had a nice time. I cannot remember the last time I went out without kids.

So that is it for now. The excitement reigns on.

It's Just Tuesday

I have not written in a while, but there was not much to tell. I went to work. The End. The kids were home playing, swimming, and doing that kid stuff they do. On Saturday, we went to a nearby mall because they were having a cooking demonstration from the Food Network with Iron Chef Morimoto. However, we did not stay because the parts we wanted to see were late in the day, we got there early, and it was so hot out. Besides, I did not much care for that mall. It was the first time I had been there and it was a bit too pretentious for me. They had way too many fancy stores in there. Stores so fancy I cannot even afford to look in. We went to a different mall and we saw Click. It was funny.

Anyway, on this day in 1955, Disneyland opened its doors to its first paying customers. They began construction on The Happiest Place On Earth on July 17, 1954 and they held the dedication ceremony exactly one year later. Disneyland truly is the happiest place on earth. It is impossible not to be happy there. Everyone loves Disney. Who doesn’t love Mickey Mouse? I cannot think of anywhere more fun than Disneyland. I am thinking of getting us some season passes so we can go often. It is just barely an hour from my house to Disneyland. In addition, they have good deals on passes for Southern California residents. We would defiantly get our money worth. That is my goal for next month. Then we can go and be happy all we want. Not that I am not happy now, just some extra happy could not hurt.

Happy Monday!

Yes, it is Monday, so what could be so happy about it? Well, unlike many people, I like my job. I like my hours. I work Monday to Friday 8 to 4:30. I only live 6 miles from work so I do not encounter a lot of traffic. It takes me about 10 minutes to get to work each day. I am paid well, and I just got a raise at the beginning of the month. I get along with all of my co-workers. Of course, I do not really have any. The whole employee list for this place consists of the owner, me (I am his assistant. He calls me the office manager.), two guys who work out in the warehouse packing baskets for shipment, and sometimes the owner’s wife comes in and helps me around the office. That is it. I like it. No drama, no crazies… just baskets. I have been decorating my office. It is nice and big and has many windows so plants grow well. In our apartment, houseplants probably would not grow because there are not enough windows and it is too shady on the balcony to grow any. Therefore, I grow them at work. I got some plants from people who buy baskets from us and I bought a few plants. I never have any trouble finding nice planters to put them in. I took some nice picture of my office for you to see.

So yesterday, we decided not to be too lazy and we went to the zoo. Catherine wanted to see the new monkey trails and Carolynn wanted to see some turtles. I do not know what it is with her and turtles lately.

Today we have no plans. I am making chicken nuggets for dinner. The kids will probably want to go to the pool. It will not matter if they were out there all day swimming, they will still want to go.

Carolynn's Kid News

On Sunday, David and Mom completed Kingdom Hearts and they started on Kingdom Hearts 2 and I was lazy all day- Thank you, Thank you.

Monday I was lazy- Thank you, Thank you.

Tuesday was fun. We played games and watched movies and ate hot dogs and at 9:00pm we saw firework. They’re awesome!

On Wednesday, we were lazy, but we cleaned and went to the pool.

Then on Thursday, we woke up around 9:00 and the guys who came to build our bed came around 9:28. After they were done, the bunk bed was wonderful! It has a desk and drawers on the side! Then we played on it until 5:00. Then we had dinner.

On Friday morning we partied and played and Catherine was weird, but everyone knows that. I played with my Cabbage Patch Kids for a long time. Then we danced around like weirdos and Catherine shook her butt! Kitty was in our window. After we danced I made my bed. Then I drew lots of pictures and read a book. Then we had dinner.

On Saturday morning I cleaned and ate pancakes. They were delicious. Then we went to see Pirates Of The Caribbean: Dead Man’s Chest. Then we played like weirdos at home and ate at Wendy’s.

P.S. Why won’t you people answer my question of the week? Last week it was “What’s your favorite Disney character?”

We went and got burgers for dinner. It was a nice day. Today we have no plans. We are eating donuts and watching Scooby Doo. That is about it.

Jennifer’s Weekly Yummy

I saw this on 30 Minute Meals this week and it looked so good. So we decided to give it a try. It was pretty good. I didn't care too much for the dressing. We should have just cut the avacado up and pitched it in the salad and got some ranch dressing. But it wasn't bad. I love the Food Network. I watch 30 Minute Meals, Good Eats, Emeril Live, Unwrapped, Iron Chef America, anything with Bobby Flay (he’s my favorite), and a bunch of other shows.

Turkey Club Salad with Avocado Dressing
Recipe courtesy: Rachael Ray
Show: 30 Minute Meals (Food Network)
Episode: Quick and Cool

12 slices microwave ready sliced bacon (recommended: Ready Crisp bacon)
3 hearts romaine lettuce
2 cups pea shoots, radish spouts or bean spouts
3 plum tomatoes, sliced
1/2 medium red onion, chopped
Salt and pepper
1 1/2 pounds rotisserie turkey breast or thick sliced deli roast turkey breast
2 ripe Hass avocados
1 lemon, zested and juiced
1 clove garlic
1 teaspoon salt
2 tablespoons red wine vinegar
1/3 cup extra-virgin olive oil
2 teaspoons hot sauce (recommended: Tabasco sauce), eyeball it

Crisp the bacon in microwave according to package directions. Remove from microwave and chop. Of course, any bacon or turkey bacon which you have on hand may be substituted. These pre-rendered bacon products simply allow you to keep more heat out of the kitchen by giving you the option of a low-maintenance microwave preparation.

Chop romaine lettuce and arrange on large platter. Arrange a bed of pea shoots or sprouts on top of the lettuce then arrange the tomatoes and chopped red onion on top of that. Season the salad vegetables with salt and pepper, to your taste. Scatter chopped bacon onto salad.
Remove the rotisserie turkey from the bone with a sharp carving knife. Slice the rotisserie breast meat on an angle into strips. For thick cut turkey from the deli, julienne the meat into 1/2-inch strips. Arrange the sliced turkey down the center of the salad platter.
Cut all around the ripe avocados down to the pit. Twist and separate the halved fruit. Remove the pit with a spoon, then scoop the flesh with a spoon into your food processor bowl. Add the zest and juice of 1 lemon to the food processor. Chop garlic on your board and mash with 1 teaspoon salt to paste the garlic. Add garlic paste and the red wine vinegar to the food processor. Place lid on the food processor and turn it on. While the blade is spinning, stream in extra-virgin olive oil and add hot sauce. Stop processor, taste dressing and adjust seasonings. Pour dressing back and forth over the platter evenly when you are ready to serve this simple and so-cool salad meal.

Home Sweet Home

There is not a thing going on today really. The girls’ new bunks arrived today. They promptly built a fort. Since there was not much happening, I thought I would share our new pad with you. As many of you already know, or should already know, we moved from our previous location in May. Our new apartment is in a very nice location. The girls are going to a good school here. We live in a nice building. And here it is.

Here is Carolynn on our balcony. We live upstairs. We have two bedrooms and two bathrooms, a pretty big living room, a nice kitchen and dining area with dishwasher, washer and dryer. We like it.

Our apartment allows pets. We used to keep our dog, Elvis, here but he did not like being an apartment dog. He went to live with my parents and we just have our cat, Kitty.

This is the other pool at our apartment complex. This one is at the main building. There is a clubhouse with an internet café and a gym over here. This pool area is also wi-fi connected in case you want to computerize something while working on your tan.
